Tova Bohrer.I accepted an offer from Apple Seeds and have been in the job for about two months now. I love it so much. I manage all of their garden-based nutrition education programs for Kindergarten through 5th grade. We provide pretty much the only nutrition education that students receive in NW Arkansas and it makes me so happy to be in this position. Just this school year, we have already seen about 6,500 students, and we will see about that same amount in the second half of the school year. Thank you for helping me get here!

Stacee Nault at AU Commencement.I enrolled in the Master of Science in Nutrition Education (MSNE) online program at American University without any prior background in science, nutrition, or healthcare. After spending over a decade primarily as a stay-at-home mom, I was looking to turn my passion for using food as medicine into a career.

“The MSNE program equipped me with practical skills immediately applicable to real-world nutrition careers. It effectively combines the flexibility of the online format with the interpersonal feel of a traditional classroom. I developed a high level of connectivity with my professors and classmates, many of whom I now consider close friends. The journey was appropriately challenging, and there were moments when I felt overwhelmed. T'ara Smith.The best qualities of the nutrition education program are the opportunities to complete projects that one would likely complete in the real world. Practicality in education is super important to me and keeps me engaged in my coursework. I feel like I’m making a small impact in the world one big assignment or project at a time. I know if I feel like this now, then I know I’ll feel even more empowered once I graduate and apply everything I learned toward bettering my community.

Kara White.I had this fear that I'd never build a community in an online program or strengthen my networking abilities because I'm not on campus, but that's just not true. Today, we have our own little network. There's no way we ever would have connected outside of AU. Now that fear is gone!

Kara White, a second-year graduate student in AU’s online Master’s of Science in Nutrition Education program described one of her concerns before she enrolled. “I had this fear that I'd never build a community in an online program or strengthen my networking abilities because I'm not on campus, but that's just not true. Today, we have our own little network. There's no way we ever would have connected outside of AU. Now that fear is gone—that making connections would be difficult online.” 

Speaking about the professors and the Department of Health Studies, Kara explained that collectively they foster community through several support systems including a dedicated Facebook group, weekly emails, and communicating frequently about workshops, internships, and other news. “They do a really good job of making sure that we all are a part of the community, even though there are folks who participate from across the U.S. and internationally in the program.

Describing a student project she completed as a part of the MSNE program, Kara talked about the unexpected bonus of meeting American University alumni in the real world. “I met with one of my local legislators for a project last semester. We're chatting and I said ‘I am doing this project for my grad school program.’ The legislator asked me what school and I said ‘American University in DC.’ He responded saying, ‘I did my undergrad and my graduate work there. Go AU! You let me know how things go when you graduate.’ And I will let him know after graduation because we're alumni and we have that connection.”

I had such a positive experience with my professors, with Christy and with everybody in the [Department of Health Studies]. They were all very accessible, supportive, responsive, and just an incredible support system. As someone coming from a very isolated rural community, it was fantastic to learn with such a wide variety of students, and to meet folks from different parts of the country, and different parts of the world.

“It was important to me to make sure that all the classes, especially the electives, touched on different areas that I was interested in. [I wanted] to make sure that I was able to get the training, understanding, and education around the things that I thought would be helpful for me in my career and in supporting the clients that I had already built for my health coaching business.

“The main factor for me was that the program was accessible and completely online. That was a high priority because I live in a very rural area. Being able to do everything asynchronous was another big thing for me. I interviewed with other schools that had a scheduling requirement, where you had to show up for a class between 6 p.m. and 9 p.m. on Tuesday, Wednesday, and Thursday, or that type of thing. At the time, that just wasn't doable for me. So the ability to log in and have a structure so I knew when assignments were due was important, but also the flexibility to do those at 6 a.m. or 12 p.m. or overnight or whenever I needed, was a high priority for me.

“The peer review that I did throughout the nutrition education classes have been extremely helpful as an editor no matter where I go. I do peer review now for a living. We learned more detailed, scientific, and sometimes challenging concepts to understand through nutrition and science courses. We learned how to take those concepts and share them with the public in plain language that folks can understand and hopefully apply to their health. That is a big part of public health, health literacy, and communication. I learned a lot about health literacy and accessibility in the program. That's translated well to what I'm doing now because I take complex information and figure out a way to share it more simply for everyone to understand. That way we can have equity and accessibility for all folks no matter what their tax bracket. So I'm very fortunate for the writing skills that I gained through the program because they have been extremely important in my career path.

“I found a lot of folks are familiar with American University and it's very cool to talk to other alumni that I’ve met after the program. Sometimes I get identified through LinkedIn or other places. Someone will say, ‘I went to American University too, it's a great school!’ I really enjoyed the program and I think if students are looking for a path that's different from a registered dietitian, if they're looking for something that has translatable skills to a lot of different aspects, I think it's a really important program.”

“For me, part of the experience was to get the education and to add to my resume with a reputable program. And I wanted to be able to do it online. So that's why American University really appealed to me. It was the [nutrition master’s] program with the highest pedigree that I could find, and it was also really flexible. Plus, I didn't have to take any prerequisites.

I love the flexibility of the program. I like that I could take a break between May and June for my family. So that was beautiful—the fact that I could just pause.”

Evi Terzopoulou.Nutrition for Health has been my favorite course so far because it was an introduction for me to the amazing world of nutrition science. Touching upon important issues regarding metabolism, digestion, caloric intake, etc., was extremely interesting and I hope we get a chance to dive deeper in the upcoming courses.
